Title: Can seeds be planted in the EB?

I want to plant root crops by seed in my EB. How would I sow the seed and what do I do about the cover?

Yes, some root crops can be planted in EB.  Carrot and beets are in the planting instructions.

The trouble is getting the seedling not to touch the plastic cover until more mature.

I'll cut the cover holes and direct seed greens, peas and beans. I'll try to center the seeds and for the most part it works fine.
