Deb,
I agree...I freeze mine, what is left from what few plants I grow.
I am more a spinach grower and add the chard to the spinach.  When we get tired of the spinach (rare) or just want to save some---it's the freezer !
I am interested to hear how the canning of swiss chard goes also...maybe next year I will try some canned... Undecided

I totally agree about the Ball Blue Book. It's worth ever penny.

I keep my copy in a fire proof safe. (With the guns.  Grin)

Considering how much the leafy greens wilt down when cooked, I still think I'll be freezing mine tomorrow.

When you freeze greens, what prep do you do? Blanch for how long? Do you freeze in liquid, or squeeze dry then freeze? I found some things freeze better when they're submerged in liquid (asparagus and green beans come to mind).

I love the USDA website pickling and canning guide. You paid for it already with your tax money, so go download it!

The bread and butter pickle recipe in there is to die for.

Potatohead,

Great reference !  I picked out a few great recipes to try when the veggies come in !!

I was wondering if anyone has ever tried to make pickles of any kind from yellow squash...I saw the zucchini pickles and was wondering if I could substitute yellow squash.... Undecided
Any ideas ?

On page 6-9 at the very bottom of the page (below the bread and butter pickle recipe) is a variation using squash. I used patty pan squash for that and it was delicious.  Another great recipe is for the Pickled Bell Peppers, page 6-21. Yum!
