I enjoy all my BER toms that are big enough to bake. Also the toms I harvest before frost that don't rippen.

Slice green tomato
place on oiled baking dish or cookie sheet
spread with thin coat of mayo
sprink with parmesan cheese and any seasoning you like - italian seasoning, powdered garlic, and salt and peper work well.

Bake at 400 for 15 - 20 minutes till golden brown.

This works well with eggpant too.
