Almost anything can be pickled. One year my bro & bro-n-law got into a big argument over who got to take home the leftover pickled cauliflower. Neither would have said they liked cauliflower, but they were pickled hot and spicy.
I always make pickled beets and dilly beans - they're good together as a salad.
I pickled grapes once - I had a lot of grapes and a recipe - no one really ate many, they were tasty, but when do you eat pickled grapes? With what? I've seen lots of recipes for pickled fruit, but haven't tried any others, yet.
I make sauerkraut - fermented - by the quart so I don't have to can it and can just keep it in the fridge without killing the enzymes. About 2 heads will fill a quart and leave enough cabbage left over for cole slaw.
This year I'm going to make bread-n-butter pickles. I actually like the onions best. Speaking of which, dilled onions on a sandwich are mighty tasty.
And I always have zucchini relish on hand.
Start with the Ball Blue Book, available wherever canning supplies are sold (under $10). It has all the directions for preserving just about anything. All the recipes are tested and if you follow the directions you won't be disappointed. You can safely change spices or flavor of vinegar - just be sure you keep the ratio of the vinegar/water/vegetable the same as the recipe and let your imagination go!
The 'tested for safety' recipes all use vinegar with 5% acidity. Be sure to check the label. I've been seeing jugs of 4% flying off the shelves.

well we just so happened to have some guys come and cut down some trees for us........yeah we are trying to spoof those cruddy reality shows that are obviously staged.......no offense to people who like those reality shows.......i like one or two myself.......
