You can tell I'm a newbie to the forum.  I just posted this reply on the old message I was directed to by the link.  Here it is again:

Just picked my first asian eggplant and broccoli this morning.  Unfortunately, my eggplant has been blooming profusely but not setting fruit.  Am hoping this is because of our torrential rains over the last couple of months. 

One of my favorites with eggplant is what I call eggplant pizza.  I slice the eggplant crosswise, season and brush it with olive oil, broil on each side, top with pizza sauce, spaghetti sauce, seasoned tomato sauce, or just a nice slice of tomato that has been seasoned.  Top that with cheese and broil until the cheese bubbles.  Great appetizer or side dish, oh so good, and almost guilt free!

We have WONDERFUL Pho restaurants in Los Angeles, but Id really like to make this delicious noodle soup authentically for my best friends parents, visiting from Vietnam.

Does anyone have an authentic recipe for the Pho BROTH?  My early attempts have been frightful

It could be the rain or it could be that it isn't warm enough. Eggplants like heat.

Thanks Tag for your prognosis.  I'm starting to get a few now so, you're probably on the money.

For BB:  Here's a recipe link for Pho:  http://steamykitchen.com/271-vietnamese-beef-noodle-soup-pho.html   I haven't used the recipe - just too lazy.  I have a Vietnamese restaurant very close that makes wonderful pho.  For the price, it doesn't justify my time even though I love to cook.

By the way.....Just made this soup over the weekend.....positively fantastic. The only changes I made, I used half the nutmeg and used a fluffly little soup type pasta instead of elbows. I will be making this again, very, very soon.

After years of perfecting this soup, I discovered that the white variety of eggplant is tastier.
Don't be afraid to sprinkle with your favorite grated cheese when serving!
