Author Topic: Need a recipe for ALOT of beets !!  (Read 1385 times)

Yesterday I recieved a Beet from someone the size of a soccer ball !!!  It was 8 inches across and weighed 6 lbs. 12 ounces--!!!  It weighs more than some babies when they are born.   I am at a loss what to do with it.  Any ideas would be appreciated.  I love beets but this is more beet than I have handled before and I don't want to waste it !!

A beet that large may be tough...  Huh?

Of the top of my head:  cut into chunks and roast with olive oil; pickle some with red onions; make borscht (beet soup). I'm sure there are lots of recipes online.

If you find any good ones, post them here.

I have not cut it up yet but and it may be tough...it shocked me so much I decided to seek advice first.  I am planning to roast some as you suggested. 
For the 2 of us we usually cook about 4 medium beets so if this beet is viable to eat it should serve about 20 !!
