Hi Joy:

You tried this recipe once or eggplant Parmesan?  This one isn't eggplant Parmesan - it's an eggplant casserole.  It's supposed to be tender.  Sicily, Sardinia, Northern Italy, Southern Italy, they all do it differently, and each swears by her own :-)   As for the eggplant Parmesan, she takes hours preparing her version (from the province of Ferrara http://en.wikipedia.org/wiki/Province_of_Ferrara).  With the eggplant Parmesan, I believe I remember her putting it in the refrig as part of that long process but I wouldn't wish that or the effort she puts into her home made lasagna on anyone. 

Let me know how your eggplant growing goes.  I just bought my soil, tomatoes, and bell peppers today.  I'm ready to start this all over again!  Mom has been very sick, but as soon as she's better we'll get her Earthboxes up and going with the eggplants as well.

Hi Mark,
My name says all. I learned the Sicilian way. Here is the fried eggplant recipe my version.

Slice the eggplant fairly thin and place on paper towels, salt and leave it alone for a while. You will see the sweat and then turn over, do the same. All the salt does is rid the eggplant of bitterness. Wash, and pat dry.
Have two bowls ready and your electric skillet on with some vegetable oil in it. ( olive oil is wonderful but it is not high heat oil, so I opt for sunflower or safflower oil)
One bowl: eggs stirred up. You can add lemon juice or Middle Eastern style, add milk. Not both.
Next bowl: Progresso bread crumbs Italian seasoned and add garlic powder, parsley - dried ok,  and basil, parmesan cheese, red pepper flakes.
Dip eggplant in egg then crumbs and fry. You will not be disappointed.  Mangia!

Hey Mark,
Thanks for all the info, I myself and family love Italian dishes.  Spent a lot of time doing missions out of Sicily and would go back....

Hope your mom feels better (although that post was some time ago  Wink )....the video reminded us of our grandma that passed recently to cancer...however...your mum sounds exactly like our grandma, uncanny actually.  We wish you many more years with her.

Mark,

I grew Kwintus pole beans this fall with great success.  My freezer is full.  They are a wonderul flat pole bean and if picked before getting too large, are so tender.  I'll be planting again in late spring after my next crops if spinach, lettuce, beets and snap peas are harvested.  You can get the seeds from Park Seed.  Just be prepared for Jack in the Beanstalk plants.  I had a 10 foot trellis (electrical conduit) and they grew over the top and 3 or 4 feet back down.  They have a much longer growing season than the bush beans.

In case you're wondering, yes, I had to use my 8' step ladder to pick beans.  It resides on my patio and is currently being used every day to harvest Sweet 100 tomatoes.

Wow, this thread is still hanging around?  Smiley  After about 4 tries at the password, I managed to get logged in.  It's been a while.  Thanks for the well wishes.  Chris, strangely enough, turns out, mom had cancer.  They did surgery on Tuesday.  I think they got it all but won't be 100% sure for about a week.  While at the hospital, she had a her surgeon, physical therapist, and a few nurses going on and on about how they wanted to go to Italy and were asking about her home made liquors and Italian dishes (it's a military hospital and a few have been stationed in Italy - the rest want to go.)  I'm at her home taking care of her for a week and thought I'd stop by this forum and see how things are going since I have some down time.

I also wanted to see if there were a season planting guide here.  I bought her 2 earth boxes for her birthday but she's been too sick to do anything with it.  Says she wants to get started in Spring, so I came here to see if there's a seasonal planting guide.

She said she wants to do another recipe and I think many will like it.  We'll get her 2 new earth boxes going and see if I can get her to join in this forum now that I bought her a laptop and set up a wireless router in her home.

Thanks again for all the well wishes.  New Italian recipe is coming soon - I promise.

Mark, I just found the Earth Box forum, and your thread.  As a SERIOUS eggplant lover I can't wait to try your Mom's recipe.  (And I'll never divulge the secret of her seasoning mix.  For which I thank you both!)  Fingers crossed here, and prayers for her, that she's doing well.  Thanks for posting her recipe.
